Simon scored the winning goal three minutes after the break after he was set up by Florent Mollet.
It was the winger’s first league goal of the 2023–24 season.
The 28-year-old, who has struggled to hit top form this season, was in action for the entire duration of the game.
The victory was the Canaries’ first of the season.
